I was just going through my models and looking for something to make tonight and found my old Inquisitor Coteaz. After putting him together was thinking, even after the nipple plate it is an awesome looking model.
What is your favourite stock GW model?
For me, is Coteaz (now I finally put him together, I appreciate him a lot more), the old Vindicare assassin that is pointing the rifle (I like the sleek look) and the old Ezekiel (Dark Angel Lib, I like the pose and robes etc, back in the day changed the backpack, was an awesome model).
What is your favourite GW conversion?
For me, I have done a million conversions. My favourite so far is taking a Tau commander in a XV85 Enforcer/XV86 Coldstar kit and using bits from a XV88 Broadside kit to create a Commander in a XV8-02 Crisis Iridium Battlesuit. Was fun to make and looks pretty sweet.
These questions probably come up a lot, I was just curious.

In terms of my favourite off-the-shelf models:
- DE Mandrakes. I like the general look, I like the faces (or lack thereof), I like the eldritch fire they have.
- DE Scourges. Just really beautiful models and also fantastic for conversions.
- The old DE Archon (so much better than the current one).
In terms of non- 40k models:
- Sylvaneth Tree Revenants/Sprites. Discovered these very recently and they're really nice models. Also, as with Scourges, great conversion opportunities.
- Vlad von Carsten. Always liked this model a lot more than the standard vampire models. Just felt it was the best encapsulation of what a vampire should be.
In terms of conversions, my current favourites are probably these three:

Also kinda like this one (Fallen Angel):
To be honest, outside of the Destroyer Lord, most of these have been sitting on my shelf for a while, since there wasn't anything in the DE army to represent them. Ynnari has opened up some possibilities, though.

Not sure I am taking the proper essence here. Did you mean it has to be a GW sculpt? Here are my favorite two conversions using GW bits.
First a GW mini. Winged cannoness (you used to be able to buy a jumppack for your cannoness. Sadly the GW new no model no rules coupled with "modeling? converting? what's that? Theory" took it away.
These next two are majority GS sculpts using bits, but making specific GW models.
Banshee exarch. I really wanted one without her helmet. My face is terrible, but hey, I was learning. I sold this mini...I should redo her and use a third part face, because there are somw awesome ones out there.

Konrad curze is one of my favourite models. I made a conversion using his torso/legs, which won me a finalist pin at the last golden demon.

Probably the Amirigers.
As for Conversion, for my Traitor guard a Daemonengine Basilisk, called the Eyechild. A Amiriger Hellverin that i now use as a Stalk tank leman russ punisher or exterminator ( AC version) and my Mechanical Daemonprince.
( BTW TERRIBLE PAINTED IS TERRIBLE; TRUST ME I KNOW)

Can't say for favorite GW model, but playing Guard has spurred my conversion side. I made some Kasrkin (which, while still needing armor plates on the legs, look almost as good as the originals), and, as Elysians are no longer available, converted a squad of them too. Just discovered my paint job for those Elysians after Templin Institute finished their Stellaris Invicta series.
I want to convert more things in more unique ways!
