I need help building a good 2000 point list from what I have. I have all the rules. Please help. Should I play 1 knight or 2 or 3?

Well, I'd like to refer you to the site of 40k tourney results.

Instead of a pure IK list, one combines IK often either with AM/IG, level 32, or with Adeptus Mechanicus, rusty 17.

If your heart is set on pure IK, I think the best variation I've seen on that is 3x Knight Crusaders, 1x Knight Warden, 1x Armiger Helverin, all house Krast. That or 2x Knight Crusaders, 2x Gallants, 2x Armiger Helverins.

Or you could just go bonkers and do Castellan + 2x Valiants.
