got a game of 2.0 coming up at my games club with a returning player so have been trawling lists and there seems to be a lack of big base ships beyond the odd Palp Bus or Support Shuttle

what happened ? I can see the change to Evade only changing a dice than adding a result makes them a bit less tanky but even so it seems I'm missing something

I was going to say that it could be a local meta thing but that doesn't fit for 'trawling lists'. Seems like each faction has one big based ship that is reasonably popular;
Empire - Palp shuttle.
Rebels - Trick Shot Han in Falcon.
Scum - Ketsu or Assaj.
Resistance - Rey.
FO - Lots of Upsilons, Tavison seems to be everywhere.
Separatists - Dooku/Maul depending upon whether they watched Ozzie system open or not.
Republic - Don't have one.

Also one of the most popular ships used to be big based but is now medium, Firespray!
They do seem less common (and they don't do anywhere near as well as in v1) though, I would guess the changes to the rules that mean that even two dice ships can stand a reasonable chance of causing damage (reinforce cant totally block damage) and the change to firing arcs has had a bit to do with it but there is also the fact that a lot of them just are not very good.
Jumpmaster, YT2400 and Ghost which were all meta staples in v1 have been nerfed into the ground through various means (Ghost can still get a good showing but is very match up dependant) and big bases pay a tax on not only the bigger base but also on various upgrades.

I just quickly skimmed the first few pages of List Fortress and it was somewhat light on big bases

Shame about the Ghost as that was my go to list at the end of 1/0 as Hera with a TLT/AC meant I didnt really have to fly or shoot honest

Current we dont have a local meta as we sort of played 1/0 into the ground and 2/0 was a good escape route and this will be my first 2.0 game, my opponent has been going to our nearly local store but as the nights close in driving both ways in the dark on subpar back roads is losing its appeal it seems

I'm most likely going for some X-Wings and maybe an E-Wing as I only got the 2/0 starter and rebel kit

I use the ghost... it's not meta shattering but it's also not the worst ship in the game. With some small adjustment to points (and a new card coming soon) it would probably win a tournament or two.
It can seem weak but that moment you fire 5-6 dice and cause every focus to become a crit (with saw) is amazing. I took down a fire spray in 2 rounds of shooting (he drew 2 direct hits!).

For fun and in casual games the Ghost can indeed be great! Highly recommend the Hera/Saw/Ezra/DT/HU build, its 101pts of pure awesome (right up to the point you start taking crits and loose half your list!)

Yeah list fortress would be light on big bases as its just tournament lists ranked by placing/number of and they are not that great as described above. But as you are looking for fun and casual, who cares?! I would recommend the Ghost above for giggles,
For E-Wing heavy;
2x Knave with R4, FCS and proton torps with Wedge and R2-D2 is an amusing list.

B-Wing heavy;
Cassian, Ten Numb, Braylen Stramm and Dreis is actually pretty good you just have to remember that you want to always stress your b-wings (barrel roll into focus if not red move).

We love big bases;
Hera/Saw/Ezra/DT/HU and Han/Trick shot/Lando with 11pts for seasoning.

X-Wing heavy;
Luke/Sense/R2-D2, Wedge/R2 and Thane/R2 leaving 17pts for flavour.

All are pretty fun lists, not going to win a Regionals but certainly can be moderately competitive also a nice mix of new stuff for V2 so you can see the changes on the table.

If the later, I don't see it. Take an action to roll 2 evade dice where 5 of the results might as well be blanks, v2 the evade token doesn't add a dice with an evade just changes a result to evade, as the Ghost has 0 agility that means it will only proc at range three or obstructed. Better off taking a focus to guarantee one or a lock if you have Saw.

Leaning towards the X-Wings, Trick Shot Han seems like fun but my flying is a bit rusty and close to a rock and on a rock are a coin flip

I have never seen Lando pilot used and looking at his rules I wonder why, him/Jyn, Jake and Wedge is 173 without upgrades and seems like it could really put the hurt on a lot of lists. Subbing out Wedge for Luke leaves 20pts and that would be hell to try and take out!

going with Wedge, Luke and a couple of Z95's, armys that fit into lunch boxes are cool

well got mildly stomped by Vulture Droids, although Outmanuever Wedge is a killer and the s-foil on high skill pilots is very handy
