basically if your infantry are embarked do they count as "infantry holding objective" or must they be disembarked? would it only count as vehicle holding objective and not have the infantry key word?

No and no. You cannot measure the distance between an Embarked unit and an objective, therefore they cannot hold an objective.

They would have to be disembarked.

While they are embarked you can't measure to them to see how close they are to the objective. It won't matter if the vehicle is open topped. The rules have changed since past editions, and it looks that one of the things they wanted to eliminate was to have a transport with infantry inside park on top of a target and have the infantry count as holding the target; the way the rules changed it gives the opponent the chance to attack the unit holding an objective without having a pesky vehicle in their way preventing a direct assault.

im new only painted a couple squads so far, but most of the point cards say you just need a unit to hold the objective and not the infantry keyword, does this mean that a transport can hold the objective? what defines a unit?

Any model can hold an objective normally. That said, many armies have special rules (in at least one circumstance called Objective Secured) lets that army's infantry Troops secure an objective and control it unless the enemy has a similar rule and also has Troops with that rule near the objective.

Units are defined on the first page of the core rules.

When you add models to your roster, they are added in "units" of one or more models, as defined by their datasheet.

So yes, a transport is a unit, and it can hold objectives. All armies have some kind of special rule for certain units (usually Troops units) to be better at capturing objectives, though.
