I guess there is always matt black.

Rule #1: Your models, your paint.

However, late war German Heer uniform colors range from grey, green-grey, gray green, greenish, and grayish. They were never really brown, and certainly never black. Even field uniforms for the Waffen-SS in late war weren't black.

If you are talking about boots, most of what I have read is that by late war most were brown, unless individual soldiers took the time to dye them.

I was rather shocked to find out that a lot of the german uniforms were a gray-green, not pure gray.

I used Tamiya grey primer for the base of my uniform and vehicle color, and I was happy with the results.

I almost always go black for priming my minis, and my late-war germans are no exception. I like a nice dark base to start from. Given your options, I say go for the grey.
