Two, this looks like a crazy fan made movie, but it appears it has been produced by Warner Bros for actual money and is getting a theatrical and home release in line with their 2021 Covid strategy. I mean, it looks like it might be fun, but I'm not sure it looks good.

I mean Mortal Kombat as a premise is already kinda crazy to begin with. They've already included their catchphrases in the movie and let's be honest, most fans of the franchise don't care so much about the story than seeing people get pummelled on screen. I feel like this is a "turn your brain off and enjoy the gore" kind of movie and if you expect anything else you'll be disappointed.
Also, I swear the amount of different backstories for how Jax lost his arms continue to build. You could probably make a whole cinematic universe just from his lost arms xD

I saw someone string together an elaborate theory that Cole Young is gonna become Scorpion by the end of the movie, which actually sounds like a more exciting plot to me than what's shown in the Trailer XD

Movie makers wanted to create their own character in form of Cole.
No, Cole won't become Scorpion. They are two separate characters.

Or he's actually Kuai Liang, and becomes the new Sub-Zero by the end.

If the fight scenes are kept short, then I think I could sit through it.

I'm not sure what a MK movie is going to do during not-fighting-time. Intellectual discussions, deep bonding experiences between unrelated characters from all over the world (and beyond)? It seems... off brand.
I see exposition, half-a-dozen or so recruitment missions, more exposition and then 40-60 minutes of pure face punching (punctuated by exposition) plus a 'shocking' climax ending in FX fizzle, and then maybe an epilogue with the survivors finding out about the sequel when they were headed for a small subdued 'we survived' party.

Sure, but there are trashy & entertaining/funny movies and just simply trash movies. This franchise could hit the former, but mostly ends up as the latter.
They could hit the 'get some beers and have a live MST3k experience with some friends' level of humorous trash.
I mean, the Brendan Fraser Mummy films were ultimately trash, but also highly entertaining.
The Tom Cruise Mummy film trash so awful it sunk a potentially interesting shared universe.
I feel like knowing what you're making is really important.
Don't make a dime store novel and try to parade it around as high art. It's not. People will be able to tell. The movie will appear overdone and stupid.
The Brendan Fraser Mummy films knew what they were. They were stupid fun and stupid fun was the goal of everything in the movie and it worked.
The Tom Cruise Mummy film had no idea what it was. Serious horror. Trashy horror. Pulp horror. Action adventure. Zombie apocalypse. The start of a movie franchise or the end. That movie was trying to be too many things and it ended up being nothing at all but a way to waste time.
That said... I'm not sure the third Fraser Mummy film (the weird chinese? mummy with random cast changes) really counts in the fun or entertaining category.
Yeah by then they were clearly just milking a popular film series and no one involved seemed to care if what they were making was anything but a path to money.
