Afraid I can't help much on the spray - I just prime automotive grey and then airbrush.
But for the varnish I'm a big fan of AK Ultra Matte (again, applied via airbrush). I wanted to get my minis as matte as they would go, and I wasn't satisfied with the Army Painter (so-called) Anti-Shine rattlecans, which definitely seemed to be more satin to my eyes and had a noticeable shine. I'd head good things about the AK Ultra Matte so once I'd bought an airbrush I decided to try it, and it was just what I'd hoped it would be. Oddly what took me a little while to get used to was the slightly 'waxy' feel that it gives models, but I don't really notice that any more. I haven't tried their other finishes (matte, satin, glossy), nor the 3rd gen versions, but based on that experience I'd expect them to be nice to use and to match the advertised finish. More recently I picked up a 500ml bottle of Vallejo Matt. I picked it up when AK launched that spectacularly ill-judged advertising campaign for their genocide diorama book. It motivated me to look for alternatives; I wasn't sure what impact the fallout of that whole mess would have on their company and I figured it might be harder to get their stuff in the UK after Brexit anyway (my previous order had been direct from Spain, and while there are UK stockists, there aren't that many of them). So I picked up the big Vallejo bottle which was a lot cheaper per ml, and it's also thicker so each ml goes further when thinned. It's nicely matte too and I'm sure I'd be happy if that was the only varnish I'd used, but I do love the Ultra Matte finish and I'm stocked up with 6 bottles, so a couple of coats of Vallejo and then an Ultra Matte on top has become my go-to.
