With the new Krieg team filled with different 12 options are you going to build your team with all the options plus the kitchen sink or is it better to just use 2 or 3 special troops and the rest regular kriegsman?

I intend to magnetize my specialists. There was a thread on reddit which listed all the possible ways you can build the DKoK from a single kit, and IIRC you need two full kits if you want to have all the options..

I managed to find someone who was selling their Krieg models, so I will luckily be able to create all operatives + the 4 veteran troopers that you can choose instead of the air support.

Yeah, my solution was to procure an extra set so I can build 20 Krieg with all the specialists represented. I'm a bit annoyed with GW about that one arm; for such a small piece (it's not like it's a full torso piece or something) you'd think they could have just dropped a second on the sprue so you could build any combination of the specialists out of the kit. It's mostly notable since they seem to have been pretty deliberate about "you can build whatever wargear configuration out of your X guys" in new kits over the last few years. As I've finally worked building my plastic Sisters up to the top of my pile of shame, this has really hit home on my other project, too, how consumer-friendly the kits there are with one or two notable (and thus glaring) exceptions, like multi-melta absence on the BSS kit.

Construction related: when you’re building a Kill Team for Spec Ops play, do the veteran guardsmen get to choose an ancillary option or what?

If I want to use just one kit. What would the best combination be?
I already built my sergeant with power sword and plasma pistol, spotter and gunner with flamer. I'm also going to built medic and hardened veteran and I'm not sure if 10th model which is just standard trooper could be repurposed.
But for others I'm torn between all the options. I'm especially angry that I can't have both sniper and demolition expert. Love those models.

I had a cadian torso and crouching legs and just out the demo guy stuff on that. The parts do go together decent enough

I'm still learning the rules, so I'm just putting the terrain together right now but I'm going to subscribe here to check in later for some tips, because I cant afford to snag another kit.

Actually, the example finished build in the assembly guide isn't bad. But I would suggest playing a few games and seeing what units you prefer. I don't think I will ever use a melta weapon in kill team unless they add vehicles or terminators.

Magnets, for all but the single lasgun-only model.
I an looking to use them as a veteran squad in 40k, so being able to have a lasgun on everyone is wanted as an option.
Magnets only go so far though, so a couple (the serg) get brass rods in the wrists.

I have two boxes. I got a game in today (against another krieg) and I ran:
Sargeant Plasma Pistol + Power sword. I wished I'd brought the bolt gun.
Confidant: Boltgun. Did work.
Spotter. This guy rocked hard.
Sniper: Got sniped before he did anything.
Plasma gunner. Did work.
melta gun. melted the enemies face, twice.
Bruiser: Didn't get to do anything
Zealot: got shot a lot.
Medic: saved the zealot.
Comms: gave orders to everyone, worth it.
4 regular dudes. One of them practically won the game with a single grenade.
I tried to run my leader up, but then I realized I really want him by the comms, and the comms can't keep up. The confidant sniped a couple dudes with his bolter. The plasma guy did the same. The spotter repeatedly mortared groups of guys, real hero of the match (and the enemies was also really strong).
Bruiser didn't get to do much. Neither did the zealot. I often didn't have time to activate him before others to buff them with thim.
All in all, its an interesting team that's very demanding on the mind. everyone has special abilities that affect when you want to activate them. Its tough to keep track of them all. I was much better able to keep track of my death guard team, when running them.

Yeah, bolter on the sarge isn't actually a bad idea, since giving orders to the vox guy to relay is often more valuable than risking him in melee constantly.
For anyone interested, here's Andrew Foot's Vet Guardsman roster which ended up in second place in the last LGT Kill Team tourney
(copypasted from goonhammer.com):
++ Veteran Guardsmane Kill Team (Veteran Guardsmen) ++
+ Leader +
Sergeant Veteran w/ pistol and melee weapon: Plasma pistol, Power weapon
+ Operatives +
Comms Veteran
Confidant Veteran w/ bolter
Demolition Veteran
Gunner Veteran w/ flamer
Gunner Veteran w/ grenade launcher
Gunner Veteran w/ meltagun
Gunner Veteran w/ plasma gun
Medic Veteran
Sniper Veteran
Spotter Veteran
Trooper Veteran
Trooper Veteran
Trooper Veteran
Trooper Veteran
Zealot Veteran
Goonhammer writer's comments on the list:
"A reasonable roster (Veteran Guard will never need a full roster, just one of every specialist and four troopers to take as an ancillary choice instead of bombardments). I note Bruiser and Hardened veterans were skipped entirely, and that’s pretty standard in the current meta, as trying to melee Custodes with Guardsmen is never going to be the greatest plan. This roster has the potential to run 14 models and exert a lot of board control, while having enough firepower to focus down big and tough targets and force some caution on said big and tough targets. It discourages the slingshot of a Custodes into the deployment zone, because while you might lose a couple of Guard, there’s enough guns there to kill a Custodes."
