So my question is as follows. If a unit, let's say plasma inceptors targets a unit with more than 5 models, let's say 6 and they don't overcharge, then do they all get a min 3 shots per weapon? Or do they have to resolve the weapons one at a time until a model dies and then have to roll for the number of shots?

Similarly if a vehicle has multiple blast weapons and the first one takes the squad below a threshold(down to 5 or 10) then does the second weapon use the original number of the enemy squad or the current number when determining the number of shots.

You determine LOS, range and number of shots when you *target* the unit, not when you resolve each weapon.

Plasma Inceptors do roll for the shots on each weapon individually. If they are shooting at a unit with more than 5 models, though, each weapon will indeed have 3 shots since they are Blast. Each Inceptor in this situation, would therefore have 6 shots, since he is armed with two Blast weapons. It can certainly be devastating against targets like Necron Warriors etc.

All you have to do is fire three rounds a minute, and stand

As others have said, the number of shots doesnt go down if you kill enemy models.

the real lesson is that all of a unit's shooting attacks are resolved simultaneously in theory. we just usually dice it out weapon type by weapon type.

so if you redemptor's plasma picks up models to make it's other guns out of 24'' of the enemy you don't have a problem.
