As the titel says, does this means they can only be wounded on a 5+?

Transhuman Physiology says that an unmodified wound roll of 1-3 fails.

So it does not interact with The Pelt of Balewolf at all.

(I am assuming you mean "The Pelt of Balewolf" instead of "Pelt of Baeowlf[sic]" as you wrote it).

Editing to add: The Pelt of Balewolf – Grants a -1 to Hit and Wound to melee attacks against the bearer.

Not according to the Lexicanum.

(Though I can imagine that they wanted to invoke thoughts of Beowulf from the Old English epic, as the pelt mentions "each is an able and fearless hunter.").

You could certainly take the pelt, and use transhuman, but it would not stack.

Pelt is probably fine to take though, as it lets you use your transhuman elsewhere.

Pelt is also better than transhuman against anything t7 and below, since it gives the same effect for 7, 6, and 5, as transhuman (without costing CP) and brings you to being wounded on a 5+ for str4 and 3.

If you add ".html" at the end of the link, it works. Just for datasheets atm though.
