A couple of random examples -

Example 1: Landraider Crusader pointed at a trukk full of boys - Can I declare shots from the multimelta at the trukk and the bolters/asscans at the boys, fire the MM and if it debuses the boys, shoot at them (obv if the vehicle isnt destroyed, there's no boyz to shoot at so the shot is wasted)

Example 2: Landraider Crusader is now pointed at a squad of 5 boys giving Lookout Sir to a Warboss. Can I declare the asscans/bolters at the boys and the MM at the Warboss (assuming they die to the bolters/asscan, otherwise the shot is wasted).

I think the answer is no, as all the shots are actually fired simultaneously, but just wanted to know for 100% certain.

You absolutely cannot target a unit that isn't on the board when you declare targets of your shooting attack.

Yeah the answer is no because you have no way to measure range or check LOS in scenario 1, and have no permission to target the Character in Scenario 2.

While you are correct that the answer is "no", shots are not simultaneous.

The reason the answer is "no" is that you only check for eligibility once, at the stage when you choose targets. If the target is not eligible at that stage, then it cannot be chosen as a target.

Shots are still resolved one at a time, with an allowance for fast-rolling in some cases. This is why it's important to resolve your shots against protective enemies first (e.g. Apothecaries, KFF, etc).

There was a fairly extensive debate about that here:

Actually, the Battlesuit rule is copied directly from Big Guns Never Tire, except with the Battlesuit keyword. It even includes the "Note that if the battlesuit has more than one ranged weapon, you can still choose target units that aren't in engagement range..." note that BGNT has as well.

Ah brilliant, hasn't realised that!

Thanks for the correction.
