I am eyeing GW Necromancer model https://www.games-workshop.com/en-PL/The-Deathmages-Necromancer-2016 but has some question before buying for people who built it. Can I build it without that silly vampire collar or will it leave some ugly looking gap?

If you look at the pictures on the GW site they show the sprue and parts. The collar appears to be a part on its own and just slots behind the head into the neck. Chances are you will need a little greenstuff and some modelling tools (eg colourshapers) to just put a little bit of material into that spot to cover the slot the collar would fit into; then it should look fine.
