So I have never done any drilling or magnetising of models before and I’m quite unsure of anything. How do I figure out what size magnet to use, and some articles mention something about “scoring” which they don’t explain. Was hoping a veteran could give advice and explain these things to me.

Magnet size depends on the parts you're doing. I find 1.5mm magnets work for anything regular dude sized.

Not sure about scoring. Possibly to help them stick better when installing? What's the context?

Echoing the above point about magnet size, but I'll add: Ideally the strength of the magnets used should be at least 4x whatever the weight of the item you are wanting to magnetise. Not an important point for infantry really, as small weapons and the like wont be heavy enough for it to matter. Big stuff though light knights, titans etc. it's a good rule of thumb.

If you are surface mounting the magnet then it’s a good idea to score the surface either with a hobby knife or a file or sandpaper, this roughens up the surface and gives the glue a better surface to bind to. Don’t score the magnet as far as I know as they tend to have quite hard and brittle surfaces.

My go to magnets for surface mounting are 3x 0.5mm square magnets as they can be thin enough to hide without needing to drill. Otherwise I use a size appropriate to the purpose.

Please excuse any spelling errors. I use a tablet frequently and software keyboards are a pain!
