Colour me extremely ignorant of Georgian cuisine.
I rate Grace Dent really highly, think she's an excellent critic and actually takes the time to check out different places across the country.
I think if Dakka Dakka did have its own restaurant the food standards agency would be all of it like a shot. I doubt Grotz would wash their hands even if forced.

I am a certified Food Service Manager with the State of Florida... which isn't the highest of accolades...
I always did want to open a restaurant and name it "Sam n' Ella's"

Sounds like a great greasy spoon, local diner!
I used to own a bakery and coffee shop, so I know my way around a food service industry and the rules too. However, my Certified Food Handler license has long since lapsed.
