Unreal Tournament has some epic music. Anyone who played on Assault mode will probably recognise this:
Spoiler:

The original Deus Ex also has a great main theme:
Spoiler:

Might be a cliché to say so but I'd also put Final Fantasy VII in. One of my favourite tracks is Sephiroth's main theme (not One Winged Angel which is his battle theme), it's just menacing.
Spoiler:

Jet Set Radio Future.

1) You cannot win. 2) You cannot break even. 3) You cannot stop playing the game.

Outside the DarkTower, amongst the roses.

I can't believe no one has mentioned Resident Evil 1 yet, IMO one of the best soundtracks of all time.

Every Dakkanaught gets a 4+ Pinch of Salt save.
When you suffer a Falling Sky hit, roll a D6 - on a 4+ the hit is ignored as per the Pinch of Salt save. On a 1-3 panic insues - you automatically fail common sense tests for the next 2 weeks and get +7 to your negativity stat. -Praxiss

I really liked the Halo series soundtracks. Skyrim and Oblivion are also pretty good in terms of music

I'm really liking the new sound they've come up with for the next game. I actually like this better than the original theme from Bungie's Halo Trilogy, although I feel like a blasphemer for saying it.

Edit: Especially at the 1:37 mark and onwards.

This and FTL: Faster than light. FTL is a kinda obscure roguelike in space, where you command a crew on your very own space ship.

Overall, going off of OSTs... and this is not an easy choice, because I used to be a radio DJ and, as such, take music very seriously, I'm going to have to go with Persona 3. It has something for everyone, honestly.
Assassin's Creed: Brotherhood is probably a close second for me.

If we were going off the beaten path of actual OSTs and into remixes, I'd have to say Chrono Trigger, hands down. their are so many good covers of CT out there.

That said, though... for just a singular song that gets my blood boiling...

One of my favourite ones ever.

Mandorallen turned back toward the insolently sneering baron. 'My Lord,' The great knight said distantly, 'I find thy face apelike and thy form misshapen. Thy beard, moreover, is an offence against decency, resembling more closely the scabrous fur which doth decorate the hinder portion of a mongrel dog than a proper adornment for a human face. Is it possibly that thy mother, seized by some wild lechery, did dally at some time past with a randy goat?' - Mimbrate Knight Protector Mandorallen.

Excerpt from "Seeress of Kell", Book Five of The Malloreon series by David Eddings.

Madworld has some fantastic music. Hiphop isn't a genre I tend to find myself listening to much, but damn, some of this is really, really amazing:

The Armored Core games also tend to have some really incredible music. I can't say I've ever heard anything like the stuff Kohta Hoshino puts out.

Lastly, Capcom Vs. SNK 2. One of the best fighting games ever made, and with a soundtrack to match.

Let's see if I can name some that haven't been listed already. I do happen to listen to all sorts of soundtracks. Looking at my mp3 player, I can suggest these ones:

IWD2 wasn't much of a game, expecially if compared to other Infinity Engine titles, but this track is hauntingly beautiful.

Very strong track, it was used for TW1 trailer. I don't think they actually used it in the game - which is quite a pity, imho.

Soule's stuff is always solid, but I think his best work so far has been the Morrowind soundtrack. Skyrim's is a lot more epic in scope, but Morrowind's really sets the mood.

Going a little back in time - before Soule, there was Hülsbeck! Turrican 3 was the only Turrican game I was able to play, but I still remember all the catchy tunes.

Silent Hill 2 had some awesome pieces. It's not complicated music, however its semplicity is probably its strongest point.

My top 1 has to be tied between any music from the Mass Effect Trilogy, and the uncharted trilogy. The music in those games just brings the characters and story to life unlike any other game I have ever played, if you have never listened to any albums, do it NOW!
