You're right, this was an impressive display of poor sportsmanship. You and your team ruined the game for your opponents by failing to bring a list that was capable of handling an opponent who brought more than a random pile of units, and completely negated all their careful planning and list optimization.
Also, 3k points is not a "low point game". If you can't figure out how to get decent amounts of anti-tank into 3k points then you have only yourself to blame.

It was just straight-up kills, but it didn't matter much in the end - by turn three, we were off the table for good.

Seriously? You played a 3v3 game at 3k points and nobody brought any reliable anti-tank?
When I play a game at ANY points level with ANY number of players I make damned sure that it can meet ANY challenge they throw at it.
Agree on Force Org limits before a match then if you have an issue. Some people like playing Mech - not really them being a poor sportsman because of it.
I'd say you guys are the poor sportsmen - you play a 3k game with 3 players per side and it seems that you guys didn't have a cohesive strategy or all of your bases covered. Fix your tactics, try again.
Also, don't play pure kill-y missions. They suck.

Yep that is your problem. Straight kills rewards toyz completely with not benefit for boyz. This is why WH40K went to objectives and the recent codices are even "balanced" to some degree around that fact.
I agree that there is nothing wrong with playing a mech list. This game would be incredibly boring if it were just foot and foot hybrid lists (you should try a mech list sometime they play very quickly which is a blast after you play foot hordes for a while). You need to write your list to accommodation for this allowance or find people who write softer lists as your opponents.
Do the people on your team always bring the same lists? or put another way do you feel the opponent tailored their list to beat your lists specifically while not informing you that it was to be that sort of game?
