No "I'd leave and order online" answers please, I have gift vouchers left over from Last Christmas that are nearly expired and I'm stumped

What armies do you have, or are you looking to start? Personally I'd wait until the Imperial Knight comes out in a couple weeks and grab one of those along with some terrain and paint.

I'm pretty much out of projects, Iv reached saturation and feel I need to get them done before moving onto new things
More orks would be good potentially, but kinda waiting on a new book
Paints are all good, I got an ultimate paint set last year that's nicely stocked
Scenery is an option, but really need a gaming table next (space rules that out)
The knight titan does look good, but surely won't be £150

If you're not sure what you want then grab a megabox/army bundle like the eldar wraith army, or storming boxes.
If you split these and sell them on eBay you should get your money back to spend whenever you want and on whatever you want.
If not that then just make sure you buy something! Bnib kits tend to swap at rrp with one another, so pick something popular and make sure not to buy older kits that are soon to be usurped.

In regards to waiting for the new Ork book, you could still stock up on boyz, just grab a few boxes of normal boyz and store them away till the new book hits, them use your bits and what not to convert as needed.
Lucky you though with those vouchers! I'd go to town on those.

Your space issues kill what would have been my suggestion - the scenery is the closest thing that GW has to a reasonably priced series of products.
After that... paints, brushes, and flock maybe?
Not my favorite paints, but they're okay.
Sometimes their brushes are good, sometimes not.
But, yeah, if it were not for space I would suggest scenery.
