I bought it for the heads and the shoulder pads and the sword, but there's some objects in there that I haven't a clue what they are.

Looks like 3 holstered pistols, a couple of grenades and a plasma and melta bit to replace one of the front-mounted bolters.

Please excuse any spelling errors. I use a tablet frequently and software keyboards are a pain!

The first 3 look like holsters or panniers, not at all sure on the next 2, the last 2 are a plasmagun and a meltagun for bike weapon options.

The yellow bits are headlights to pair with a special weapon. Instead of twin linked bolters, you get a single metla/plasma and the light thingie.

I assume you mean in games terms?
A bolter is range 24 strength 4 armour penetration 5 rapid fire
A melta gun is range 12 strength 8 ap 2 armourbane
A plasma gun is range 24 strength 7 ap 2 rapid fire, gets hot
All these are explained in the rule book.

I'm not as up to date on the rules as I should be. I keep trying to read the book, and I love all the lore stuff but once I get to the lists of numbers and acronyms, my mind switches off, especially after a long day. I have no idea what those terms mean, but I want my army to be "good."

Where can I place the holsters on my model? I've only built one bike out of three, they will be stunt bikers, so I have the bike jumping off a ramp while the rider is holding one handed onto the back and shooting a bolter off to the side. While we're talking about rules, can I play them as stunt bikers? Maybe losing a point of armour and gaining a point in crossing difficult terrain?

Different weapons have different pros & cons & cost different amounts of points. When you play a battle you 1st agree with your opponent how many points you will be playing.
You really need to read the rule book.

Holsters typically go on the hip. If they don't fit then put them on the front faring where it can be reached by the rider.
& no, you can't really make up rules like this.

If you are playing a fun game between friends, you can definitely make house rules.

If you're playing in a store against strangers or in a tournament, than the answer is no.

I'm not sure that was sarcastic but I quoted your post and added the correct AP value on bold.

Also, the melta is an Assault 1 weapon as well.

I want to be "good" and I don't want to read the rules are conflicting desires. Pick up 4 to 6 helldrakes and you can have a "good" army in that it will kill most things and requires negligible skill. You won't find people to play you though.

You like the lore and you seem really interested in painting. Just paint. We've started a regular game at my FLGS where we specifically help newer players. Get some models you like, and try them. You get game practice and the number crunchers can offer small bits of advice for your next kit. I am sure you can find some people like that where you are. Focus on the parts of the hobby you find fun, don't try and change the game to suit your whims.
