Well, the simplest reasons are that he helps Astropaths, essentially making Warp Travel safer and letting people communicate Telepathically over literally astronomical distances.
So he's basically still keeping humanity together.

All of above plus if GW advance the story in some way what so ever we will all hate it. So i guess its not good to touch Huangdi at all. Also who would replace him? Necron fleets broke into Mars in 998.M41, who knows what could happen if he died.

The emperor can influence things from the warp, by being in the throne he's also keeping the webway on earth closed stopping a flood of demons emerging right into the palace.
Also if killed he'd resurrect become corporeal once more unite humanity and defeat chaos once and for all, which would mightily annoy xenos players.

If the power up is true, after so long on throne he would be getting close to a minor chaos god at least kind of strength.
Add the phiskers they all feed him daily, if you feed enough does he heal up?

The shamans that created the emperor did so because they themselves were no longer resurrecting after death instead they were being eaten in the warp, I'm pretty sure the same would happen if he died, after all everything he's ever done has been to protect humanity from extinction, left without him it would quickly fall.

Warp travel aside, I don't think that the Imperium is very inclined to kill their God and nominal leader anyway. They're quite fond of him, to put it lightly.

Who would sit on the Golden Throne preventing the almighty toilet from spewing forth the greatest backwash of all time? Any mere mortal psyker would last a second on the throne. Malcador the Hero, one of the greatest psykers of all time, lasted perhaps hours at best.

They were being eaten because they were weaker alone.
The warp is like a sea of psychic energy. A soul is like a fish in this sea. Daemons are the predators. A human soul is weak and will quickly be torn apart. A psyker is marginally less weak.
The Emperor is incredibly powerful. He would possibly be able to survive the warp. Because of the nature of the warp belief can be incredibly powerful (Possibly explaining some of the Sisters of Battle's faith powers as an incarnation of the Emperor's psychic might in the real world) When human's believe in the Emperor they make him more powerful, when they die they power him even more. Not a lot but given the number of believing humans that die each day and the number of psykers...
That's one theory anyway...

Excluding all the big horrible or amazing things that could happen should he die another reason is that the Imperium of Man doesn't want the current status to change. You've a lot of political systems working which basically in-fight with each other for power and are mostly content with that struggle. They don't want to have the Emperor awaken because that would basically destabilize their whole current power structure. Those on the top might well find themselves on the bottom minus their head.
Honestly the only thing I think that could tip the scales would be a proper Tyranid Invasion. And by proper I mean multiple hive-fleets striking the Galaxy, likely at multiple angles. Because at that point you've a good justification for turning the big beacon that is the Emperor off or at least waking him up and seeing if his powers can change the signal or something. Nids are also the only force (possibly barring Necron) who are not Chaotic but who have the numbers and organisation (sorry orcs) to actually force a major invasion and cause change.
Not too informed with the fluff but it's a no brainer that if the emperor stopped existing it would be like the super glue holding a land raider together vanishing.....ie the prices if mankind would break resulting in humankind becoming extinct to chaos or some other inter galactic chomper

Rumor says when the EMPRAH dies he will turn into a choas god (rumor) hey is a perpetual and just revive and kinda deal with the age of strife all over again!! Or when he dies a Null (or somethin) takes his place. Overall when he dies the astronomicon will go out causing no warp travel and letting all the demons gak all over terra!
The point is when he dies imperium will fall or kinda break and he has to fix it!
