Say I got units A and B, both willing to charge enemy unit C.

My unit B is severely depleted, got like maybe 1 or 2 guys.

I don't want my unit A to eat unit C's overwatch fire, so can I declare a charge with unit B first? Can unit C decline to overwatch, saving it up for when unit A declares its charge, or does close combat start the moment unit B makes it into close combat?

Unit C can decline to overwatch and hope unit B does not roll enough distance to make it to them. If, however, Unit B does make it into melee unit C is now considered engaged and may not overwatch if another unit (like A) chooses to charge it as well.

You resolve charges one at a time and you are locked in combat when you are in base contact with the enemy unit. So yes if unit B charged in and successfully made it into base contact then the assaulted unit can elect to overwatch because they are locked in combat.

it is worth noting that if a unit is firing overwatch out of a vehicle that's being charged then they do not get engaged if a unit makes it to the vehicle so can indeed pick who to overwatch.

personally favour a deff dread over grots, the dread is more points efficient I feel, and draw a lot of attention for 80 points and can soak up unlimited bolter shots of overwatch.

This is off topinc, but I found they were bullet magnets, I never take them anymore as they die SOOOOOOOo easy with their low initiative value, and rubbishy armour.

Yep to the grots. Also, try it with the single DeffKopta. If it lives, it can even hit & run after the next assault phase and do it again.
