Sisters seem to be in a pretty good place this edition, quite a few fun unit choices and options, even if you stick with just ministorium units. Having the imperium options is just added gravy, if you want to soil yourself with some imperial soup. (It's dinner time, I might be hungry).
I do hope they get a couple new models (or at least new plastics for old models).

I will +1 the Rhino. I have been getting great value out of mine. How are you putting 2 SB's on a Rhino though? My codex tells me you can only have one....
Edit - Just checked my Index: Imperium 1. It says "an additional SB" instead of the Codex showing that you can take a SB... I wish GW could be a little more spot on with its editing.

For me it was my Ironclad Dreadnought. It doesn't do much against things with invul saves, but against everything else it wrecks face. Two different close combat weapons gives it 'Wrecker', re-rolling 1's in the fight phase, and it's T8 instead of T7 like other dreads, so it's in that sweet spot where overcharged plasma needs 4's to wound it instead of 3's.

Space Wolves: Thunderwolf Cavalry.
Grots and TWC are considered nerfed by many players, they're almost auto-include units for me and usually perform well. I also have good results with wulfen but I used to field 10-15 and now only 5-6 so I can't really list them here. I wish I had found a way to make meganobz, orks warbikers, talos and reavers jetbikes really worthy but I failed to do that so far, they all were ok-ish at most.

Troupes are consider one of the best units in 8th, no surprise there  they always do "well" for a non-horde army

I would say kustom mega kannons. They were good last edition, but the D6 shots now is great!
And given that everything is so up-gunned, and also the abysmal saves that tankbustas/lootas get from cover, and the fact that our vehicles got 2 to 3 times as expensive yet are still incredibly easy to kill, the gunz are a great points value, relatively durable, and extremely shooty with good range. (They're not T7 / 3+ armor anymore, but in all honesty, that was always ridiculous).
They are also a surprisingly effective AA unit.
Their only real problem is in kill point games, because a full unit of mek gunz counts as 10 kill points, which is a bit of a liability.
Given that they are a good and effective unit, I expect them to be nerfed to bejeebus in our codex.

Saint Celestine. Far better in 8th than she was in 7th, due to the guaranteed, additional, act of faith. And, you can keep her cost low by dropping the Superia. Additionally, with the new AP system, her sword is baller status against anything 2+. With 24" move turn 1, she's reliably charging before anything else moves. Oh and she flies, so hit and run is now guaranteed, coupled with the whole act of faith thing, she can get charged, and on your turn fight and retreat. I mean seriously. Oh and when your opponent does kill her, she comes back, on top of that objective you needed to score, or behind a wall which she'll easily jump over and be back in it next turn. She's a fabulous crutch that I use.

St Celeste and Scout Snipers.
Seriously, in Double Bubble meta, Snipers are a must. I Havent bought a box of scouts since they came with the Battle Force in 4th ed. And that unit was never put together..
But I bought 2 more boxes of snipers at my LGS and sniper rifles off ebay, so I can run 15.
Tac Marines are horrible in 8th, so I'm happy that I can run 3 squads of snipers, or 2 and a squad of Intercessors

Maybe it's just New Toy syndrome, but I've had fun fielding the Chaos Landraider. My gaming buddy gave away his death wing LR right before 8th, so I repainted and thoroughly corrupted it for my CSM army. Coupled with a few Havoc units, I've finally managed to destroy an AM parking lot list loaded with leman Russes and a Baneblade for my 1st game.
Im not one to throw down 300+ pts on one unit lightly though, so my plans will change get eventually. But for a model I wouldn't have considered in 6th or 7th, it hasn't dissapointed me yet.

I have had more fun with these stupid blimps than any other single model. They attract dakka like nobody’s business. Slip them into the backfield and just wreck havoc with your opponents plans. And they are oh so disgustingly resilient.
I’d happily pay 200 pts for both plaguespitters and the flesh mower on the same model, if I could.
Heck, I’ll probably build one just like that, because it will make me grin every time I see it.

If we're going to go by what I was expecting going into 8th, IG infantry in general. If you told me that the same army that I played in 7th which got absolutely smashed most games was going to be considered one of the most powerful things in the meta in 8th I would've laughed in your face. To a similar extent, my infantry squads have been massive heroes and every game they pull their weight and take out some sort of scary target when the enemy least expected it.
As for unexpected MVP's that really shouldn't be, that honor is shared by my regular little Taurox (aka the Party bus) and my Executioner with plasma Sponsons and a lascannon. The Taurox has consistently punched above it's weight every game, launched (and won) several assaults, weathered stupid amounts of shooting, and gotten it's passengers where they need to go every game. All while being one of the only vehicles in most of my lists and attracting darn near every AT gun the enemy has.
The plasma Russ is just stupid lucky, I don't know how else to describe it. I had a game with it on 2 wounds where it overcharged, rolled 6 shots on the turret, hit with half of them, fired 6 shots on its sponsons, hit with half of those, and didn't over heat once, all while needing 6's to hit, and obliterating an enemy Russ. That and something about 6+ armor saves just don't seem to phase it either, it's passed more than I care to think about. Love that stupid little tank and as I get more Russes built he will probably become my Tank Commander. Emperor knows the poor crew has earned it.
