Step 1) Sell tau Army
Step 2) Buy a good and/or fun army
Step 3) ....
Step 4) Profit!
But seriously, I'd go for a Farsight colour scheme, not many people do it IMO, and you can always just use the normal rules if you want (though more power to you if you use the Farsight Rules)

Yes, the Farsight Special Character significantly changes the way the army works. Pick up the codex and have a gander. If you like what you see, go for it

Are they not the same thing? By "Farsight enclaves" I assumed you meant an army using the Farsight Special Rules.

Tau typically adapt their armour to whatever color fits the terrain they are in. For instance my army is from Ser'ca their sept color is orange and their armor is an icy blue (bases are partially covered in snow).
Farsight has not sept color as far as I can tell, but usually their armies (imo) should have a more beaten up look as thier gear gets worn down (and they can't get replacements easily).
Basically choose a color scheme you like and then add the sept color you want. I would suggest picking up the codex if you want examples....

Farsight is a cool model but I dont think his special rules are any good. To be honest, you shouldn't get your fire warriors or crisis suits into assault. Ever. Just buy some kroot.
As far as sept goes, I saw a mostly white color scheme that looked great on tau. Just pick a scheme that you like or make one up and get a random name.

I once had a single Sister Superior go three turns against 60 Orks, and a Canoness go four (and still live!) with an entire 750 point Space Marine force. The dice do crazy things at times.
