So for the SM if I wanted to convert them to DA or BT, would I have to wait for the conversion kits to assemble the models or would I be able to assemble them now and convert them later?

You should wait, as you get replacement chest plates, shoulder pads and weapons. You also get a lot of bits that you should check before modelling the pose of your mini, I also use blue tak to see if the intended pose works for me. It also helps to dry fit pieces to make sure there are no huge panel gaps. Hope this helps

Yes, conversion kits come with full bodies, heads and shoulder pads. If you are using the conversion kit, you need to have it in before you start modeling. Now, you can have models that aren't converted, but that is just a side note.
