I would bet if you cut out some of the cow bits and switch around thier reflex and strength stuff you would be pretty accurate, the ork section is the exact opposite of what is true in some areas while in others it isn't as much.
Plus that book is ment to make the guards to think they can win.

Also considering it uses propaganda to tell guardsmen not to trust the tau, because they use propaganda to get their people to fight, i wouldn't believe most of what is written in it

But which one do tau have? The only piece of fluff that mentions their mammary glands is a piece of blatant propaganda.

Of course Shadowsun did show her off her "wargear" and "prowess" to motivate the troops.

Judging from her suit, if she had breasts, they would only fit in the upper part of the suit. An udder as it appears on a cow would cause problems if translated into a bipedal creature. Though the only canon appearance of a female tau that I know of is Shadowsun.

And do they chew a cud?

Well, in all seriousness, it hasn't really been specified by Games Workshop, so anything we have to say about it would be pure speculation. I'm willing to bet, however, that Games Workshop, if it HAD to specify whether Tau possessed udders or breasts, would just go with the breasts. They're already humanoid in shape, after all, and as you said, Shadowsun's armor just wouldn't make sense with udders.

Now, if we're quite done talking about naked Tau....

Well it has been specified, but it was specified in a piece of work that was blatant propaganda.

Which brings me to some other questions.

Are Tau vegetarians?

Do they chew a cud?

Are Tau disgusted by Kroot practices like eating the freshly slain? (I know they would allow it, but I mean more of the emotional response)

Hmmm, well, I'm unaware of the answer to most of those questions (although I don't think that they chew cud... but who knows), but I do know that they are very disgusted by the Kroot's habit of consuming the dead. They hope that the Kroot will become more "civilized" the longer they stay committed to the Greater Good. (Which is hilarious, because they still constantly hire out mercenaries.)
