As the title says why is it people cut out the chatter?
I'd really like to leave a movie of two people playing on as background noise without some unrelated music once in a while.

Well some people do, Trevy does for his warmachine battle reports, and I'm sure that some others do it for their 40k battle reports (I just don't watch quite as many of them). If you search around you'll find some.

1.) You can only make movie files so big. Good luck finding the storage space, much less enough bandwith, to be able to support a 3-hour movie.
2.) It would be super boring. Hanging out at the game store is fun because you get to interact with people. Watching people small talk without being able to contribute... well, it's tough to see how that would be particularly entertaining (unless the two people were comedians, which I'm guessing they're not).
3.) I've got better stuff to do with my time. It's barely worth sitting through a three hour movie if it means I get to keep in touch with the pop culture zetgeist. Otherwise, I don't know how much it's worth more or less wasting that much time.
Not to say it's impossible for someone to possibly pull it off, but the end result for most people would be about as exciting as listening to someone describe a dream they had last night, or watching someone else's home videos of their family events, while paying for the bandwith required to be dull to people over long distances.

Dan from miniwargaming has IMO by far the best of this type of battle reports. The ones with Joe (eldar dude) are ok too. To me the rest of the banter reports seem a little too long and the banter a little forced.

Or go to Ustream and check out the coverage of Killadelphia Open, NOVA Open, or the old Adepticon coverage. The games of the top 1 or 2 tables are streamed and available to sit down and watch later. It's a lot of bad jokes and a lot of the tops of two dudes' heads but with a few exceptions (like the early rounds of the NOVA Open), the people playing are among the top players in the country so while you'll get the occaisional blowout, you won't get much of people with no clue how anything works.
