I love big monsters, and Iove Hellcannons! But of course all are expensive so I'm torn.

If I run Wulfrik and 4x10 Marauders, I'll have 2,180 points left.

If I run my 3 Hellcannons, I'll then have 1,280 points left.

So then my monster mash choices are:

Skaarac, Soul Grinder, Skarbrand, Scyla Anfingrimm

or

big Archaon, Sorcerer Lord on steed, Jugger Lord, Fateweaver or Fury Thirster

Or should I be sensible and try to fit my 30 Daemonettes in there to actually score objectives? If running giant monsters, does one even need the ranged destruction of 3 Hellcannons?

With 40 Marauders and Wulfrik that is a solid base no doubt.
But try to figure out the best way to fully utilize his Seafang ability. Maybe make two squads of 20 or one squad of 30 and one squad of 10.

As for Hellcannons they're cool, but 300pts for 2d6 mortal wounds a turn? That is a steep costs especially fielding 3. So maybe take 2 and take a soul grinder (best of both worlds Imo).

If I was to take that many monsters I would try to put some Wizards to support them by casting and unbinding spells. Fateweaver would be a great choice as he can unbind and cast two spells and Gift of Change is awesome.

From my experience, Archaon is insane. Drive him up the board and they will (try) to deal with him and fail. Archaon + Fateweave would counter their magic phase (assuming they will try to cast spells to try to weaken them) with their unbinding potential.

So to wrap it up. I would make one marauder unit huge to use with Wulfrik, 2 Hell Cannons, Soul Grinder, Archaon, Fateweaver and whatever else you want.

As for the Daemonettes, just drive your monsters into those objective camping units and send them running.
