Regards the paint, I have always painted horses with oil paints, it's considered old school these days but used to be "the" method.
Simply you cover the horse model in whatever you want as your lightest shade and let dry. Then cover the model with a darker colour and wipe off the excess (that's where the skill comes in) so the lighter colour is revealed on the higher parts of the model, because it's oil paint the colours naturally blend. I sometimes do 3 layers but mostly 2 is fine.
