And it looks like the paint is thinner, it's almost a wash effect, I could see the paint naturally pooling and creating it's own dark and light spots... is that how it works?

I recommend Paasche. Here in the states their parts are easy to come by, so if you have problem they're easy to fix. Most of the big box stores care the brand and parts. They're also reasonably affordable.
The dark and light spots is a combination of the preshading and the paint. Airbrush paints are thinner than standard paints so they can go through the brush better. This and the very act of airbrushing makes the paints semi-transparent.
