I've tried reading through some of the fluff that I could find, and it seems that their main soldiers are Plague Monks. But, do they have Clan Rats, Rat Ogres, Warlock Engineers, and other special weapons teams besides what comes in the Star Collecting box? Or is it just the Monks and the two siege engines that make up Clan Pestilens?

Any Skaven faction can be found utilizing units from other factions as they are commonly bought/bribed/enslaved/etc. Some are more common than others, with rat ogres and weapon teams probably being the most 'rented-out' units. But for what is actually a part of Pestilens, it's difficult to say. Certainly they have slaves that would function as clanrats on the battlefield (and in the game), while there have been snippets suggesting proper clanrats and even stormvermin can be part of the clan as well.
