I think somewhere mentioned in the old lore that they're like the spines on some fish. Essentially sensory organs that let the Wraithlord see or something considering they're basically a soulstone in a faceless shell.

Gamewise they can help anchor the wraithlord in ruins as in if the model would tip off the second floor the third should be high enough to hang off of.
