I love the way Minotaurs models look and their special rules but according to the fluff these guys are not very fond of the regular guardsman (I want these guys to be like brothers in arms ). So I have 2 options either (1) pick Minotaurs and make a successor chapter (and deal with tournament organisers for bringing FW though with 8th edition indexes out it seems pretty much settled that FW is here to stay) or (2) make and ultrasmurf army and call it a day.

Minotaurs don't really play nice with anyone, but you could easily just make a succesor/branch chapter (rename Asterion in your fluff to the Chaptermaster of said succesor/branch chapter), and when playing in Tournies declare they are Minotaurs.

'Not Very Fond' does not mean they will not fight along side Guardsmen

just means they wont hang around after the party to clean up.. or feel particular upset if a few of them fall over and hurt themselves

They would just fight as if the guard weren't there, it's completely fluffy to have them fighting the same battle.

I wrote the brothers in arms type of bros because most of the time guardsmen are used as cannon fodder by space marines and since Minotaurs are donkey-caves (pardon my language) and they even use space marines as cannon fodder... you get the idea. Anyway I will follow your advice and make a successor chapter/other chapter that will use their special rules and characters just with different colours and chapter name .

Makes sense thematically. You don't have to 'use' DKoK as cannon fodder because they're too busy clogging the bores of the enemy's cannon.

If you want a good Hellenic theme for your army that also plays nice with guardsmen look up the Iron Snakes!
