So, I'm mostly a Warhammer hobbyist/player, but I have a girlfriend right now who has a son. So, priorities have had to change lately. The amount of time I have to build and paint models has dropped pretty dramatically (not that I mind in the slightest). That said, I'm considering getting into X-Wing. When it comes to Flight Path, I come from a Star Trek background. I still have a ton of ships, but it seems as though Attack Wing just isn't taking off as much around here as X-Wing is. So, besides the Starter Set, what other expansions would you recommend in building an Imperial Fleet?

Beyond the starter I'd recommend;

An Imperial Veterans box

A Tie Advanced (Vaders ship), ebaying the title and advanced targeting computer cards is worth looking into

Maybe a couple of base TIES (either classics or the newer First Order ones)

TIE Phantoms are fun, but have a tricky learning curve

If I was starting over I'd say if you already have the Force Awakens core set (you need the damage deck):

A Tie/fo (Force Awakens Tie, yes it's slightly redundant but the blister pack is basically a stand alone package with all the upgrades you need to run a really good pilot)

Imperial Veterans

A Tie/sf (special forces tie is also really strong)

And then flavor as you like, I know that list doesn't have much original trilogy stuff so if you happen to like interceptors or shuttles or whatever you can definitely go from

I prefer to buy from miniature manufacturers that *don't* support the overthrow of democracy.

Beyond the Starter Set, I would say:

get the other Starter so you would have the Blue and Red one.
get the Imperial Veteran Box and either one Tie or Tie/fo expansion

should give you everything you need to fly and have enough for variation on your lists

Harry, bring this ring to Narnia or the Sith will take the Enterprise
