Similarly, and somewhat related, on a model like a Flyrant, could you therefor measure from said wingtip for your own shooting attacks? What about Assault? Can a tall enough model assault a big-profile model by coming in B2B with a wing?

Yes, you can measure from a wingtip for
LOS, or as commonly joked about - A tank can fire out from a bit of tread.
You do not need
LOS to assault.
However, you measure
B2B from actual bases, so you can't measure from the tip of your wing... Unless the model has no base, in which case you would measure from any part of the model.
