One of the things we found as an issue in FG is that some schools are simply more powerful than others (elementalists and necromancers in our case).
We have discussed getting rid of penalties for out of school casting.
Initial spell selection would be 3 from one school and one each from 5 other schools.
Assumed effects of the change include: schools playing less impact on spell acquisition and more rapid advancement (spells will succeed more often so more XP).

Other than flavor/fluff, can you think of any other impacts there would be with people playing omni-wizards?

I think the wizards will have a lot less individuality as everyone will tend to focus on similar spells. Whether you consider that flavor or gameplay is up to your group though.

Each school rewards a different style of play.

Your group is favoring direct damage, which is the obvious rookie thing to do.

Removing the schools may work well in stand alone games, as it would give players equal footing, but I don't think it would improve a campaign .

Spells that allow you to leap or create walls can be leveraged to amazing effect.

I raised omni-wizards as an option for our next campaign since elementalists are now nicknamed assassinators in our very small group And that's from me actually being really restrained in playing mine during the first campaign.

The group decided to just play RAW and play on.
I'm fielding an illusionist which is not only the in-game opposite in magic school but also appears to be be much weaker in direct combat. We have fun no matter what so I think I'll make a point of playing lesser used spells to see what kind of off the wall stuff can be done.
