I will start with my Easy Cheesy Taters
1 2-pound bag of frozen, cubed hash brown potatoes (or cube 2 pounds of fresh ones)
2 regular sized cans of cream of chicken soup
2 8-oz bags of your favorite shredded cheese (I usually do 1 sharp cheddar & 1 pepper jack)
Literally all you have to do is mix all the ingredients together in a big bowl, then dump it into a suitably sized casserole dish. I usually use a disposable aluminum pan for easiest cleanup. It’s a good idea to spray the pan/dish with cooking spray too since it might stick to the bottom. Pop it in the oven and bake for an hour at 400 F, then enjoy the cheesy goodness. Maybe around 45-50 minutes if you use fresh potatoes. I always use frozen since it’s faster and easier.
You can use any other canned cream soup, but I found that chicken works best. Cream of celery makes it taste like celery, same deal with cream of mushroom, but chicken gives it a nice, rich taste. You can also use more cheese if you like, but I found that 2 bags seems to be enough, and it’s still plenty cheesy. I tried 3 bags once, and it seemed a lot greasier.. I guess from the cheddar grease.
I usually make 2 batches for our holiday dinners and they go real fast. Everyone loves em, because cheese.
