I'm looking at starting in on AOS finally, and I really want to play some artillery, so I was looking at dwarves as I like the cannon and organ gun. How does this faction perform? I'm not too concerned about being super competitive, but I want to be able to have fun and have a chance each game. Any advice?

It's worth pointing out that GW decided that things like cannons and organ guns needed to be a faction on their own rather than remain with Dwarfs and Empire. As far as I remember they need to be taken with another army now which can be any Order army rather than just Dwarfs or Empire.

As for playing Dwarfs I still play them and while I have fun you're very dependant on buffs in your hero phase and get forced into a defensive playstyle. If you do play the 'Dispossessed' I'd really consider allying some legacy Dwarfs.

gotta tell yah, from my perspective, ..fyreslayers are not "good" but are a lot of fun to tool about with, overlords are really fun (but I loathe assembling them) regular dwarves...not so much on, not sure how long they will be around and the kits are still the same as warhammer (with equivelent price) maybe build some fyreslayers with cannon support?

Dwarves (the classic dwarves) are pretty weak. Fyreslayers got a boost in GHB 2017 and are seen more. The overlords are... I dn't know. They shouldn't be that good but they seem to be holding their own.

Overlords are really mobile and pretty tough, they get the feel of AoS pretty good too. Fyreslayers are mostly a slayer army with big dragons but can cause a glorious mess on the table (with start collecting they are both alot more affordable than before)

fyreslayers are one of the best armies since GHB 2017, but extremely expensive to play.

Kharadrons are also really good, probably not better than fyreslayers, but, importantly, they are a good match up against the dominant cheese army in the game (tzeencth)

Fyreslayers won the first GT at WHW. Fyreslayers are currently the best "dwarf" army and often use KO allies as part of a competitive force.

Bloodbowl - Lizardmen.
Horus Heresy - World Eaters.
Marvel Crisis Protocol - Avengers, Brotherhood of Mutants & Cabal. 
Middle Earth Strategy Battle game - Rivendell & The Easterlings. 
The Ninth Age - Beast Herds & Highborn Elves.

Well since you love artillery that means the Ironweld are in for you as allies and so you just need to choose a main dwarf army.

Dispossessed if you want to turtle and troops that excel at bravery, Fyreslayers if you want to charge in with glass cannons or Overlords for even more firepower and mobility.

You could try buying a little of each and mixing and matching to see what playstyle suits you.

The recent rebased troops and stuff they got from the Ghb2 makes me think for a long time before they get an update to be more in line with their Irondrakes and the "iron wall" of the Duardin.

Thanks for the input all, I really appreciate it. I'm keeping everything in mind and hadn't thought much about fyreslayers or overlords, but I am now. I was really hoping I could do something more classic-looking, if that makes sense, but it sounds like that's okay at best - but could still be fun. I'll probably take the advice to try a bit of each, and start with 1000 points of Dispossessed, then get fyreslayers/overlords to try later.

Fyreslayers are the most durable army in the game at this point. Large numbers WITH 4 up, 4 up rerollable, and 4 up save after save. It's really good, against anything.

Question on the fyreslayers, and I guess in general - berserkers can take 2 handaxes. In combat, each model attacks with every melee weapon. Berserkers also reroll hits if they have two handaxes - so does having two handaxes only give them the rerolls, or do they actually get 4 attacks instead of 2, with rerolls?

Dual-wielding a weapon doesn't give you extra attacks unless the warscroll specifically states so, you general just get either a bonus to-hit or, in this case, rerolls to-hit. The warscroll will tell you what it does. I believe this was clarified in the first FAQ if you're needing a reference.
