I'm reading the omnibus of Ciaphas Cain, the involuntary hero of tje Inperium. In the first book he encounters T'au, and the story around this is fantastic.
I'd like to create a small army, like 500-750 points worth, of T'au as a homage. But I don't know where to start. Could some of you help? Any help is much appreciated.

Get one or two Start Collecting Tau! Boxes. The money value of that box is so good that it's borderline stupid to buy individual XV8 Crisis team or fire warrior sets (for ~€5 more than a box of Crisis you get a €30 box of fire warriors and a SC box exclusive Ethereal on top of the Crisis) at all.
Go from there, though I would wait with additional purchases until the Tau Codex drops next month, unless you REALLY want specific models outside the Start Collecting boxes RIGHT NOW. A box of Pathfinders is always a cheap and good addition though.

Dark it was, and dire of form
the beast that laid them low
Hrothgar's sharpened frost-forged blade
to deal a fatal blow
he stalked and hunted day and night
and came upon it's lair
With sword and shield Hrothgar fought
and earned the name of slayer
