(Dakkees? Dakkidees? Dakkels? Oh, well)

A few hours ago, I received a TON of Deathwatch mini's, and even more different shoulder pads to go with that. But my knowledge of the Space Marines and their Chapters is pretty limited (I've played only Xenos armies so far, so yeah)
- I've been doing a little digging to learn more about the nature of every Chapter, but I haven't been able to get a full picture of every Chapter that the Deathwatch can draw from.

Here's a picture of the shoulder pads available to the Deathwatch:

So as you can see (and most likely know), the DW consist of a bunch of different Chapters, with each of their own tactics, playstyles and preferred weapon choices.
- So I thought it'd be AWESOME if I could gain more knowledge on the different chapters, to be able to properly match weapons and shoulder pads, like for example, have the TH guy be a Salamander, and so on.

Any peeps out there, that can help a brother out with some more info?

Greetings fellow Dakkanaut!
So do you want a brief run down of the typical load-out of each chapter as listed? Oh boy...
I'll do my best, but always look for a second opinion, and when in doubt rule of cool.

82. Ultramarines - versatile. Stalker bolters might be characteristic, allowing the ultramarine to maintain a vantage point and keep an eye on the tactical situation.

83. Imperial Fists/Crimson Fists - heavy weapon for the imperial fists, such as a heavy bolter or a frag cannon. Power fist for the crimson fist if you possibly can. Oh and call him Cortez.

84. Blood Angels - power sword and infernus pistol, or some close combat variation, focusing on swordsmanship.

85. Space Wolves - chainswords and bolt pistols, or alternatively power axes and storm shields - though I don't know whether the DW weapons would look appropriate. Season with wolf pelt and claw talismans, and maybe a bare head with wild hair.

86. Dark Angels - plasma weaponry or power sword. Or both. Be sure to add robes or a hood or something shady and sinister.

87. Salamanders - everything is on fire. Flamers on flamers. Alternatively thunder hammers, given the forge aspect.

88. Raven Guard - lightning claws, or stalker bolters - something stealthy.

89. White Scars - a bike. Maybe a power sword in the form of a tulwar, or a power spear. Definitely no heavy weapons.

90. Iron Hands - a melta or grav weapon of some description, or a combi-weapon. Lots of bionics, and maybe a few creepy servo-skulls.

91. Flesh Tearers - chainsword or chainaxe if you can get your hands on one, or alternatively an eviscerator. Rough and pitted armour, with plenty of blood smears and maybe a skull mounted on their backback. The more angsty and bloodthirsty cousins of the Blood Angels.

92. Black Consuls/White Consuls/Mentors/ etc - honestly fairly versatile, as Ultramarine successor chapters. Again consider stalker bolters, or combi-bolters.

93. Novamarines - again versatile, but a small point: they have mauri tattoos on their faces and skin, so if you're a real whiz at freehand you could try that to make them stand out.

94. Brazen Minotaurs - not much info on this one, sorry. Maybe shotguns?

95. Silver Skulls - a power sword or combat blade of some sort. These guys are head hunters, so mount some of their trophies on shoulder pads or backpacks.

96. Brazen Claws - same as for Iron Hands.

97. Black Templars - close combat orientated. Normally chainswords, but alternatively power swords and storm shields. Try and grab a bald head, or a crusader style helmet.

98. Howling Griffons - again quite versatile, but they favour mk.iv (4) armour, and are an Ultramarines successor.

I'm sorry I can't help with all of them, but this is just some ideas on how to make your DW marines look the part.

If you are looking for specific units within the deathwatch, like jump pack units and bikers, these are more likely, or at least more stereotypical

Devastators: Imperial Fists/Crimson Fists.
Assault Marines: Black Templar / Space Wolves / Raven Guard
Bikes: White Scars / Dark Angels.
Librarians: Dark Angels maybe?
Techmarine: Iron Hands

But as for Black Templar, give them chainswords, or swords. Shields are also important. Think of crusading teutonic knights.

One thing to consider is occasionally breaking expecations, everyone expects to see a raven guard assault marine or stalker bolter marine. a raven guard devestator however is something that might stand out due to it breaking the expectations

Opinions are not facts please don't confuse the two

This is the line of thought that I subscribe to. Even though these chapters all have weapons that they're quite fond of, it doesn't mean that you have to give them those weapons. After all, even though, say, Salamanders like flamers, melta and hammers, they also have plenty of marines who fight with bolters, lascannons, power swords, etc. I find lots of people making Deathwatch teams end up somewhat like the Kill Team Cassius set - a group of marines that somehow improbably contains members of all the first founding chapters and a few other well known ones, and they're all stereotypes of their chapter.

I prefer to make my Deathwatch marines with whatever weapons I feel like arming them and paint up the chapter pauldrons using chapters I've found on Lexicanum with cool heraldry (using homemade decals). I'll only occasionally try to match the favoured weapons to the chapter or use the main chapters. I've only done it so far when I've used chapter specific bits to make a marine, but even then I've mixed it up on occasion - e.g. I used the power sword and plasma pistol from the Dark Angels sprue on one marine, but painted the pauldron as a Consecrator since it makes reasonable sense for the Consecrators to have some cool gear with Dark Angels heraldry on it. If I do another batch I might start making up heraldry (a whole bunch of DIY chapters!) rather than just sticking to the official ones. I think it provides more of a feel that the Deathwatch comes from the whole of the Astartes rather than just a First Founding Club, and gives you a really interesting set of marines.

However OP if you want to make use of the best known chapters and arm them according to the stereotypes, Drakeslayer's list is pretty good.

However raven guards are still codex chapter so have as many devastators as ultramarines. Nor are assault marines their core. Just like white scars, ultramarines etc it's basic tactical marine with his trusty bolter that makes up most of their fighting.

To be fair, the Killteam Cassius models are deliberately supposed to be exemplars of their different Chapters. As an example of something different, look at Shadow-Captain Korvydae from Forge World; OK, still a Raven Guard Assault Marine, but he's armed with a ... thunder hammer? Or the old version of Ultramarines Captain Sicarius armed with twin lightning claws.
