I would have thought that they don't affect them in any way.

Indeed, the Order of the Iron Star of Mordian states, "MORDIAN INFANTRY model only." It therefore cannot be given to an Ogryn Bodyguard model as it does not have the relevant keywords.

Regimental doctrines and orders don't interact with MILITARUM AUXILIA units, because doctrines and orders only apply to units with the appropriate regimental keyword.
