Looking for some ideas for entertaining board or card games that my girlfriend and I could enjoy just the two of us, or possibly adding a couple of our friends.

She and I and our friends are really looking forward to the new Deadpool card game.

Obviously, if we are anticipating Deadpool....you can guess our sense of humor

Deadpool Humor is similar to Cards Against Humanity, in my book (both are awesome). Sadly, that's better at 6+ people.

Zombie Dice is a quick and dirty game where you're a Zombie trying to eat people's brains.

Cooperative or Competitive?

Time limit? 30 minutes or less vs 3 hours?

My wife and I really enjoy 7 wonders duel if your looking for a great 2 player game, highly recommend the expansion also. Patchwork is also a quick and fun 2 player game my wife enjoys.
Dead of winter is a fun group survival game , the crossroad cards are a neat gaming mechanism. If looking for a great worker placement game I would recommend The Manhattan project, easy to learn but building nuclear bombs can turn some people off.

Most contemporary boards games play best with 4-5 players, and they very rarely play well with only 2 players.

Games that work well for 2 players are usually designed and intended for 2 players specifically, and having said that, the majority of 2 player games are war/conflict type games.

The prevalent opinion in contemporary board game design, is to refrain from player elimination, which is when you have to eliminate opposing players from the game in order to win. Think Risk and Monopoly, neither of which could have been produced today and marketed towards "hobbyist" board gamers. However in 2-player games, player elimination works, because it immediately ends the game, and no one is forced to leave the table early.

When its mostly just the 2 of us we do the competitive games (mancala, scrabble) so being competitive is perfectly fine.

Sometimes those can go a bit long (scrabble has been about a a couple hours or so..depending on how many games we play).

My girlfriend and I play

Magic the Gathering and Warhammer Shadespire most often.

She also likes to X wing, Rum and Bones and Zombicide.

Her favorite board game at the moment is Blood Rage.

All are playable with at least up to 4 players.
