Just picked up the Start Collecting Slaves to Darkness box, but I won't got it for a couple days because my store didn't have it in stock. Do the Knights / Warriors come with both equipment options or am I going to end up with two knights with glaives and three knights with swords?

The sprues have enough weapons to equip the squad fully with both. Bear in mind though that the warriors only have options for sword and board or double hand weapons; you need to special order the halberds or great weapon options.

Excellent, I'll probably just do the same their hand weapon and shield. I just wanted to make sure I would have enough Shields to kit them all out the same.
