Originally I was going to play Seraphon but with the Nighthaunts I'm being lured towards an undead army. I'd quite like a mix of zombies, skeletons and ethereal to play a army of the barrow downs type force. I'm not really up on all the AoS styuff so before I pay out for the books and models, can this be played as a legal mixed army or must I stick to a single book like how 40K works?

You should be OK as everything will have the DEATH keyword (and Zombies & Skeletons are Battleline) but I'd wait to see if v2 changes anything.

good news, death is nothing but 1 big bowl of soup.
there are themed lists that offers small bonuses ofc, but in the end its just 1 big soup.
