Is there a way to sort forum posts? For example, I would like to find the most-viewed or most-responded post of all time in a forum. How can I do that other than physically scrolling through YEARS of posts?

The forum software doesn't have anything like that, no. The closest is the 'Top Rated Topics' up in the 'Thread Tools' menu, but that goes by Exalts and is forum-wide, rather than specific to individual sections.
