I've decided to start playing AoS with a group of friends that I play 40k with. We have decided to all start at the 500 point mark just to test it out. I've narrowed my army choices down to Dispossessed, Idonetb Deepkin, or maybe some conglomerate of the Death Alliance. So here is my question: given the point restrictions, and the desire to do this just for fun (competition is not a priority) what are some of the models that I should look at or perhaps an entire list for any of the above armies? Thanks a lot in advance and sorry if the format is weird, I'm on mobile, unfortunately.

Honestly if its just for fun then I'd say build what you like the look of that fits into 500 points.

Head to the warscroll builder and click on the 2000 points to open up the points values and set it to vanguard (1K points) and then -500 points to get to 500. Note that at 500 points some armies don't work all that well as its below the curve that the game expects (heck some heroes are near that in points costs alone); but its a great starting point to get into the game and get a handle on the rules and it lets you start gaming sooner rather than waiting longer to build bigger forces.

On the Warscroll builder you can use that to give yourself some starting ideas - you'll need a leader and 2 battleline unit (it notes them on the builder). After that its take what you want up to the point limit (more or less).

This was surprisingly helpful. Going with your advice of "build what you like the look of" I've put together something kind of basic.

Dispossessed (500):
Runelord

Warriors x10
Warriors x10
Warriors x10

Cannon

Thoughts? I'm really just brainstorming thus far and am curious if I'm going in the right direction.

Looks like a solid list and you've found the allied system with the Cannon! The only downside to Dispossessed is that they have no Battletome, that said considering how many models they've got in plastic I'd wager that they are fairly likely to get one of their own (it might even bring the Cannons and such back into the faction as right now they are split off).

Like I said a fair few factions can struggle at 500 points with regard to options and diversity; that gives you a nice cheap core of troops, a leader and some ranged support. The warriors are an older sculpt so might one day be replaced sooner than some others, but honestly I doubt that will be for many years as yet.

I'd say its a good start to a halfsized army!
