A six pack of Guinness: Tall, Dark, tough to chew through, but surprisingly identical in numbers.
(Deathwatch Primaris)

As much as I enjoy chatting beer, I don't know how to begin answering this. I collect a bunch of different armies and I love a bunch of different beer styles!

Well to give you some ideas:
I mean I'd totally call my Primaris Imperial Fists a twelve pack of Corona: not especially strong, yellow and an aquired taste that usually requires a splash of something else to make it better.
Genestealer cults I have trouble matching up with a beer, but my Sisters could be a Hot Spiced Beer in cans (aka they bring heat and ride in Rhinos).
Plague Snorkeller probably fits my DG/mono Nurgle Daemons best

I don't think the idea is 'what do you drink while you play', 'cause I also don't drink and am, in any event, about 5000kms from my nearest source of Sovereign.
Squats would be that beer you tried once 20 years ago, quite enjoyed for it's quirky taste, and haven't been able to find since, only to discover the brewry went out of busniess ages ago.
Opinions are not facts please don't confuse the two

Yeah, the idea is more "if your army was a beer (or soda), what would it be?"
And some good stuff here, I've had a bit of a laugh at some of the descriptions.
Astral Militarum: I'd say it's a selection from a large party; lots of Bud Light, along with some craft beers sprinkled in.
For my Scions and a small assortment of Guardsmen from different Regiments, I'm reminded of a local beer called "Luponic Distortion", which is a beer that they change the flavor of every few months.
At least you can still buy Carlsberg. R&H is a bit of a different matter FW wise.
Please note, for those of you who play Chaos Daemons as a faction the term "Daemon" is potentially offensive. Instead, please play codex "Chaos: Mortally Challenged". Thank you.
Ultramarines: Generic beer here, but still a solid default to fall back on - something like Carling (bonus points because it's brewed in my hometown, therefore generic!)
Homebrew Primaris army - My new favourite, like my Ultras/Carling, but just a lot more personal love for it. Stella Artois for me.
Guardsmen: So many different elements of them, can love playing them one day, and tired of them the next - John Smiths or Guinness?

But John Smiths is fething weak, IG teir-wise are not. Faithful 22 CP battery, etc.
Also, you live in Northamptonshire? You poor bugger!

Poltava barreled light beer. Worst beer on ukrain and there are many to pick from. Foams like crazy, and tastes of two things sulfur and candy that was left for too long on the sun and melted a bit. Horrible and hard to describe to someone who did not get the option to "enjoy" it. Only redeeming factor is that it can be bought really cheap illegaly.
