I would have to say Zelda and Dark Souls/Bloodborne.

Zelda games are rarely my absolute favourite games, but they are always high quality and often innovate within a generation of games. Stuff like original Zelda, Link to the Past, Ocherina of Time, Majora's Mask, Wind Waker and Breath of the Wild just have that sheen of polish to them. When you get a Zelda game you know you are in for a good time!

Dark Souls is different in that there are only 3/4 games but they are just so intensely satisfying. Dark Souls 1 is probably my favourite of the lot, just a wonderful gaming experience from start to finish. Bloodborne is next, the perfect world and atmosphere with amazing lovecraftian horror. Then Dark Souls 3 plastered a bunch of fan service over some gameplay improvements and gave us some awesome areas and bosses. Dark Souls 2 seems pretty average by comparison until you get to the awesome DLC areas and realise it really is an excellent game as well.

Which is weird, because I am often more of a strategy game type of person! Dawn of War might have made it on there, if only the third game had not been pants.
Total War likewise, but I just haven't played enough of them to judge.
Final Fantasy would have been on the list if we were only looking up to number 9.

Borderlands - I've played the hell out of the first two games but then personal interest dropped off as it became more of the same with more meme sprinkled on top. And special mention to Tales from the Borderlands, a great entry to the franchise.
Dawn of War - Most of the entries certainly have their moments, even the lacklustre third and final game in the franchise.
Fallout - I love the franchise and some of the games are timeless classics for me.
Far Cry - Played most of them, aside from Primal and some of the console exclusive titles. My love for the series kicked off with the second game, the first of the series to really get into the whole open world thing the series would be renown for. It's had its ups and downs, but I really enjoy the franchise overall a lot.
Half-Life - The amount of hours I've sunk into these games, way too many. Especially the first game with its easy support for mods.
Resident Evil - Late to the series myself, didn't really get into it all until the remake of Resident Evil 1 was released and skipped some of the more dubious entries in the series. But for me the right amount of action, horror and camp to keep you entertained.
Tomb Raider - Skipped the first series and the first reboot aside from Legend, really enjoyed the current rebooted trilogy and the smaller side games like Guardian of Light, Temple of Osiris and Lara Croft GO aren't all that bad either.

Hard to pick a favorite, but to list just a few that haven't been listed by others yet...

Wargame/Steel Division
Ultima
Might and Magic (both turn-based strategy and rpg)
Homeworld
Lufia
Stronghold
XCOM
Doom, Unreal, Duke Nukem, but especially Quake, whose multiplayer was a key aspect of my learning multiplayer computer games.

If you include spiritual successors, I'd say the Total Annihilation / Supreme Commander / Planetary Annihilation series.

Yakuza - Entire series from start to finish is a crazy rollercoaster ride of both silliness and manliness between character like Kiryu and Majima
Uncharted franchise - Highlights were UC2 and UC4, and it ended on a really good note
Killzone - Who can say no to nazis in space? The Killzone Mercenary is probably still one of the best FPS for handheld and its sucks Sony pulled support for the Vita
Dawn of War - Outside the last poopy 3rd game, it's always been solid and I liked the transition from the base building to the squad tactics of the second
Steins;Gate - One of the best visual novels I've played, and it's one of the best takes on time travel I've seen in a while
Witcher - I think it goes without saying why this is one of the top franchises
Persona - Consistently one of the best JRPG's, I started off with P4 Golden and they keep improving, with P5 being one of the best games of the decade. A lot of their spin off games (especially the fighting ones) are pretty good.

Civilization, including Alpha Centauri. The world leaders are almost characters unto themselves. I’ve found that some exhibit consistent behaviors in each new match. Montezuma will wage war at his first chance, and will be subsequently obliterated. Sitting Bull is cool, but becomes a trigger-happy lunatic if he has too much territory. Charlemagne tries to make a cult of personality. Nobody likes Genghis Khan. It creates this weird feeling of familiarity in each game, kind of like playing a board game with a few acquaintances.

It's quite hard to find a series as a whole which I like all the way through, though there are some exceptions.

Final Fantasy VII, VIII and IX. Probably my nostalgia goggles(and being too young to play IV and VI first) but I think these were the pinnacle of the Final Fantasy series, before it started to go downhill with X's obnoxious main character and transformation of the game into a series of corridors. VII had the most iconic moments, VIII had the most ambitious story and IX had the best characters (Zidane, Steiner and Vivi being particular standouts, it was nice to play a main character who wasn't overly serious for a change from the two previous games, Steiner was funny and Vivi's character arc was phenomenal).

Mass Effect Trilogy (not Andromeda). I am one of the people who genuinely enjoyed the ending of ME3 and to this day don't play it with the "extended cut" which I feel makes it drag out way too long whilst it tries to fill in every gap which was left open for player interpretation, as well as ruining the charge to the beam by taking player control away in favour of a cutscene.

The Chrono duology (Chrono Trigger and Chrono Cross). Time travel and alternate dimensions done right in videogames.

Dark Souls. Even the second, regarded as the weakest of the three, is one I enjoy immensely.

Advance Wars. A great turn based strategy game series for nintendo handheld consoles. The first was my first GBA game and boy was that a great pick to put in a bundle with the GBA console. Get yourself a GBA emulator on your phone and the first two games can easily turn any extended journey into a great time and then grab a DS or 3DS to play Dual Strike, arguably the pinnacle of the series.

Baldur's Gate. The first game is a good translation of PnP 2nd edition DnD to a video game. The second is a masterpiece with interesting quests, some relating to your party members, NPC romance options which don't just feel like you're picking generic flirt options to move it along a linear path, a brilliant antagonist etc. And by the end of it you can become a literal god, as is tradition in any DnD campaign of sufficient length

I've really loved all the Final Fantasy games (except 13 and 12) but 7 has never really stuck with me like the others. Might just be that it wasn't 6 or Chrono Trigger and it was followed up by an era of things like Xenogears and Tactics. I'm kind of conflicted on the remake; I don't have the nostalgia to need to play it like I should, but I'm curious to see if a better translation would improve my opinion on it.

On the subject of Chrono Trigger; I'd have liked Chrono Cross a lot more if it either had more or less to do with the original. It's basically unrelated, but every time it connects itself with the original its to give a horrible end to one of the original six. Then the whole thing turns out to be the missing sidequest from the original and kind of loses itself. It's still a great game overall, but I wish it was more its own thing by the end.

I'm not one to nerd rage, but I do despise the end of ME3. Not the game as a whole, but man the starchild is really disappointing, particularly since so much of the game is incredible. The nuance of options and the writing in general of the Geth war and genophage resolutions are fantastic and honestly, half my disappointment with the ending is that everything wrong with it was done so right earlier in the same game.

I'll also play pretty much anything Star Wars, although I don't know if I'd call it a series since Star Wars games span a big range of genres.

Used to be a bigtime Call of Duty junkie but the later entries in the series really turned me off.

No Metroid, no console. Sorry Nintendo but if you can't deliver the merchandize then you ain't getting any wonga from me!

Panzer Dragoon is another awesome series and thanking my lucky stars I bought PD Saga on a whim back in the day. And yes, it is pretty good.

There are only a handful of games I've played over and over and never gotten bored of

1. Mario Bros games
2. Legend of Zelda
3. Total war games
4. Baldur's Gate series/Icewind Dale

Although I will give a shout out to Heroes of Might and Magic although I've never actually beaten any of the games save for the first one.
