As title says, I'm looking at starting a Genestealer Cult army but using the T'au models as the base. I'm not entirely sure if this is possible so thought I'd ask to see if people think its viable and where would be a good place to start.

Yeah - for the most part, what I've seen people do is use Hybrid bodies as the base for Hybrid units, adding stuff like the legs, helmets, panels etc from fire warriors and stealth suits to make those, and then generally you can basically use fire warriors mostly unchanged as neophytes, using pulse carbines as autoguns and pulse blasters as shotguns, maybe with extra weathering or some GSC bits mixed in - the banner from the neophyte kit, some melee weaponry, some iconography etc. Purple kroot with extra arms would be funny as more neophytes as well. I've also seen people go for a true kitbash with mostly helmetless tau, gsc torsos, tau legs+guns for grungier looking neophytes.

I actually use a piranha as the basis for an Achilles Ridgerunner conversion, so that works really well out of the gate, the other vehicles get a little bit trickier.

"...which leads you straight into my trap, Kaiba, you see I now declare the stratagem Implacable Automata, reducing all damage from your attacks by 1 and triggering my All is Dust special rule!"

Not if you use both. If 1 fire Warrior box and 1 neophyte box gets you 20 neophytes youre good to go.

A single neophytes box has enough spare arms/heads/weapons to do a huge amount of kitbashing. Same with the hybrids box, which could also give you several sets of clawed mutant feet/legs you could graft on to Tau. The heads on the hybrids are also more GS-like, rather than the "human with nose ridges" neophyte heads. Though I suppose you could also claim that your GS-infected Tau are mixing gue'la hybrids with Tau hybrids in their infantry.
