Elegoo mars has a plate size of 68.04mm / 120.96mm / 150mm?
The standard buildings are designed to fit on most popular fdm printers so have a footprint of around 16x11cm - You could split and glue any of the larger pieces. We did most of our test printing on Ender 3 printers.
Resin printing is definitely an option. Some of the smaller models, scatter terrain and bases would look incredible when printed with resin but you'll have to double check the plate size.

Software really doesn't matter now. Although it's easiest to do sculpting, even hard surface work, in Zbrush, I can see someone doing this in Blender, Max, Maya, Modo, etc.
Can Fusion and/or Sketchup give similar results? (I assume all the objects can be made just as effectively but I'm wondering about the graphics, eg those exploding animations and the gameboard type surface etc).

These are the biggest buildings that can fit on most 3D printers, however we do have 'back to back' buildings and the modular tunnel system which can be used to create larger buildings.
