Never built a Sokar myself, but I'd be tempted to pick up a thin sheet of acrylic. Measure the thickness you need, and you should be able to find an online retailer, hobby shop, art/craft shop, etc that sell small sheets in that thickness.
There's also clear styrene sheets, evergreen sell them in hobby sized sheets, but you can likely find them elsewhere also. I've personally never used clear styrene sheets myself, I imagine they'd work fine but maybe google if other people have used it.
Packaging plastic might work, but many varieties are thin and prone to warping. For the sake of a few bucks on a model that costs $1500 I'd just buy a sheet of acrylic or styrene.
EDIT: I'm not sure what you mean by "it's windows are curvy as all hell too", they all look pretty flat to me?
