I'm no Dark Elf expert, but a unit of Crossbowmen, Cold One Chariot, and/or Dark Riders might be nice. Guess it kind of depends on where you want to army to go at 2000 points.
Try coming up with a good 2000 point list first, and then break it into 500 point 'chunks' (sometimes you might need to spread unit upgrades across 'chunks' to get the points right). Keeps you from having to plop down cash on extraneous units.

Good list I might recommend some corsairs, slightly better than the regular guys and it will add more variety. I personally would cut back on a hero and the hydra and invest in 2 corsair units rather than warriors, more crossbowmen and more cavalry. But it's your army if you have a vision, go for it. (Check out my 2000pt Dark Elf List as I am in the same boat that you are, and have a unit of 5 Cold One Knights and a Sorceress right now. Looking to grow to 2000pts eventually.)

Ditch a unit of spears in favor of another unit of Dark Riders.

He's got a mind like a steel trap. By which I mean it can only hold one idea at a time;
it latches on to the first idea to come along, good or bad; and it takes strenuous effort with a crowbar to make it let go.
